40 Recipes | #7 Cheesy Chicken Monterey

Ingredients:
1 package Knorr Rice Sides, chicken flavor
1 can (15.25 oz) Del Monte whole kernel corn
1 can (15 oz) Bush’s black beans, drained and rinsed
1 can (4 oz) chopped green chilies, undrained
1 lb boneless, skinless chicken breasts, thinly sliced
1 cup (4 oz) shredded Monterey Jack cheese

Directions:
1.  Prepare Knorr rise Sides according to package directions.  Stir in corn, beans, and chilies.
2.  Heat 1 tbsp vegetable oil in 12” nonstick skillet over medium-high heat and cook chicken, stirring frequently, 4 minutes or until chicken is thoroughly cooked.
3.  Arrange rice mixture on serving platter, then top with chicken and cheese.
Thoughts:  We had chicken and broccoli rise and used that instead.  Mom doesn’t like beans, so I added about ¾ of the can.  I don’t like chilies and only put in about ½ of the can.  We also didn’t have Monterey Jack cheese and used cheddar instead.

Verdict:  Make again?  Absolutely!  This was so good and super easy.  Now I just have to make it again to see if it will pass the dad inspection.

40 Recipes | Reindeer Donuts

Ingredients:
Chocolate Donuts
Pretzel Twists
Red M&Ms
Chocolate Frosting

Directions:
1.  Lay donuts out.
2.  Add red M&Ms in the hole of the donut.
3.  Break pretzels apart and stick in donut.
4.  Add frosting to make eyes.

Thoughts:  Super cute.  I'm not a fan of chocolate donuts and never actually ate one of these treats.

Verdict:  Make again?  Maybe.  If I'm going to an event and need to bring something, but don't have a lot of time to prepare.
